There is growing consensus in the scientific community that small doses of pesticides and other chemicals can adversely affect people, especially during vulnerable periods of fetal development and childhood when exposures can have long lasting effects. Because the toxic effects of pesticides are worrisome, not well understood, or in some cases completely unstudied, shoppers are wise to minimize exposure to pesticides whenever possible. Want somewhere to start for buying organic? Many of the chemicals responsible for contaminating the food supply have been banned in the U.S. However, there is a class of toxic chemicals known as persistent organic pollutants-POPs. Other countries continue to manufacture and use the chemicals, and their residues are carried across the globe by air and water currents and precipitation and they continue to contaminate our food. Exposure to POPs has been linked to serious disease and developmental disorders, including breast and other types of cancer, immune system suppression, nervous system disorders, reproductive damage, and disruption of hormonal systems. The report was released on the eve of the final negotiations of the terms of an international treaty on POPs that could institute a global ban on the production and use of 12 of the worst of these chemicals, including DDT and dioxin.

Grass-fed animals live low-stress lives and are so healthy there is no reason to treat them with antibiotics or other drugs. Compared with feedlot meat, meat from grass-fed beef, bison, lamb and goats has less total fat, saturated fat, cholesterol, and calories. It also has more vitamin E, beta-carotene, vitamin C, and a number of health -promoting fats, including omega-3 fatty acids and “conjugated linoleic acid,” or CLA.
Populations that eat fish regularly live longer and have less chronic disease than populations that do not. Whether this is because fish displaces meat or because it has positive attributes of its own is not clear. Certainly, fish provides high-quality protein without the saturated fat present in meat and poultry. And some kinds of fish - specifically, fatty fish from cold northern waters - also provide omega-3 fatty acids, the special, unsaturated fats our bodies need for optimum health. Wild salmon, mackerel, herring, sardines and bluefish are rich in them, as is - to a lesser extent - albacore tuna. Omega-3 sources other than fish are few: walnuts, flax seeds, hemp seeds, and the oils extracted from them, and, to a lesser extent, soy and canola oils and specially fortified eggs.

saturated and polyunsaturates, With regard to saturated fat, I tell people that you can have some saturated fat in your diet; just think about where you want to spend your saturated fat budget. I choose to spend mine on quality cheese. animal fat and processed vegetable oils (trans-fats). Avoid: coconut oil, corn oil, cottonseed oil, anything hydrogenated or partially hydrogenated, lard, margarine, palm or palm kernel oil, safflower, sunflower or soybean oil, vegetable oil and vegetable shortening. (I have never felt that saturated fat was as bad as it is made out to be, if it is eaten in the context of a diet that includes mostly mono- unsaturated fats, plenty of omega 3 fatty acids, and plenty of antioxidants.
"Good" Fats? olive oil and other monounsaturates, almonds, cashews and omega-3 fats, found in fatty cold-water fish, fortified eggs, soy foods, flax, hemp seeds and walnuts. Extra-virgin olive oil, expeller-pressed canola oil, as well as flaxseed, walnut and hempseed oil are all good choices.
